Grape Variety: 100% Manto Negro

Production Process: For this wine with limited production, we select the best grapes of the autochthonous variety Manto Negro in our own vineyard. They are harvested by hand in small cases of 12 kg. After a second selection in the cellar, the alcoholic and malolactic fermentation take place separately in different formats (wooden tank, Inox tank and 500 litre barrels), before the wine is aged during 7 months in a Foudre of 3.000 liters and barrels of 500 liters, all of them made of French oak.

Characteristics: As all the wines of Bodega Biniagual, it’s a wine made totally of grapes proceeding from our own vineyards that surround the winery and hamlet of Biniagual. The Manto Negro in particular proceeds from a 12 hectare vineyard traditionally called “Ca’n Cotorra”, located 140 meters over the sea level, northern latitude.

The soil, known as Cap Vermell, is rich in limestone and clay, with abundant pebble stones in the surface and little water retention.
